Apple defaults device backup to iCloud so you have to turn it off with each new device and possibly delete the backup if any got created. If you can't avoid this, at least set a password and encrypt the backup. Apple does strongly encourage this.

Some experience in this matter. At least as recently as 2 years ago, assume it's the same, if you wanted to do business in China, you had to use a chinese cloud company. So not AWS but Alibaba cloud or another I'm spacing on the name.

I used snapchat before I unplugged from social media and there were third party apps that could open and save messages without notifying the sender. It might be patched by now but I doubt it.
i jsut dont turn on a phone unless im going to need it. most time i drain the batteries completely and use my own open source OS setup on a desktop where I still have full control of the machine without much telemetry data and full access to the source code.

Some experience in this matter. At least as recently as 2 years ago, assume it's the same, if you wanted to do business in China, you had to use a chinese cloud company. So not AWS but Alibaba cloud or another I'm spacing on the name.
I would just assume CCP has built in back doors and encryption keys for anything in China. If a company went all in on Chinese cloud, which would be stupid but possible, then yes, CCP would have access to everything. If you're smart, you architect it so that Chinese data stays in China and the rest is hosted elsewhere with key data being synced.

AND when you sync your phone or it syncs wirelessly with iCloud, it leaves your phone with 256K bit encryption applied also, so "man in the middle" methods of intercepting your phone's data stream are not effective.
