The only steps they can take to mess with your early in-person votes are the exact same ones they can take to mess with your Election Day in-person vote (rigged voting machines, ballots getting lost between the precinct and the counting center, etc.).
The concern over voting early in-person is that although the votes are not supposed to be counted until Election Day, elections offices do release statistics on how many of each party voted. So the Dems can make a good guess at how many ballots they need to "find" and have more time to get them ready.
On the other hand, if there are more Democrats who vote for Trump than the Democrats are expecting, then even if the Dems know how many Republicans have voted they won't cheat enough to win.
I'm waiting for election day myself to vote. I'll stand in line for hours if need be.
