My family are from a long line of Ranchers, many people do not realize after my Grandfather & his brothers got back from fighting in World War 2,they found the Government had stolen nearly all their Cattle & Horses paying cents on the dollar for them with compulsory purchases for the War effort & of course with all the men gone fighting ,fences,water holes,barns & other essential infrastructure all were largely left to rot with no man power or supplies to fix.

So the men came home to see everything they had worked so hard for basically destroyed ,what happened was the Ranchers got together realizing the Government was only a fair weather friend at best & all worked together sharing equipment & even the prized Bulls & Stallions to rebuild the herds .

Just as importantly the entire Ranching community shared what ever produce they could grow so none of them went hungry but more also so they could hold onto their land.My family has never forgot that & every year since 1948 we have a family tradition of doing what we can to help feed the poor families over the Christmas season .

We are lucky to live among & have access to some great Hunting country ,so my Grandfather started a Guided Hunting operation specializing in remote Back Country hunting to supplement the Ranch income,something we do to this day & we butcher & prepare the game we harvest as part of the Christmas giving .We provided these boxes of prepared Elk meat now as we have had the first of the proper snow falls so many had difficulty getting access to the stores.

In December we will start delivering the Elk Hams,our own Ranch Beef,Venison & Wild Hog Leg roasts .Rolled Roasts ,Steaks ,Salami,Sausages,Hamburgers we prepare with our on site coolers & equipped camp kitchens .

We have had very good hunting so far so l am actually hoping we can feed 26 families this year .

This Elk came from a hunt me & my wife just did .The Wife joined me on a 3 day Horse Back Hunt ,we ended up in a Snow Storm & she got a nice Bull .I have always been hopeless & love hunting that much l even do it on my off time as much as l can.Had just seen the last set of clients off after a successful hunt & with the weather coming in knew a few likely spots that produce when the first real snow hits.Wife has been keen to get her first Elk hunt for the year in & missed the horses ,so in between hunts rather than me flying home , got a buddy to fly her in & we did a 3 day horse back hunt living off the land.

That bacon looks delicious. I'm assuming the Elk meat might taste like the game meat we can buy here in Australia (i.e kangaroo) which is delicious, very lean, very tender, strong flavour, and iron loaded (i.e double that of beef); though it doesn't look as dark (deep red) as kangaroo meat.

I have guided in Australia, so have tried Kangaroo,l preferred it in a hamburger type dish where a bit of fat was added to stop it getting tough. Elk is a lot more just like Beef & can be cooked basically the same .

One of the hunting camps we were in a remote part of Arnhem Land & it was the duck & goose season & the local Aboriginals wanted some ,so we went hunting with them ,

The Ducks & Geese literally blackened the skies ,man that Magpie Goose is one of the best eating game birds l have had & another meat that is extremely healthy. I have also eaten & hunted a lot of the Buffalo there another great meat in a old school casserole really flavorsome,but a lot "gamier" than Elk .

Great to see a Aussie supporting the President ,having served & been there often working, the importance of President Trump being re elected to keep a strong military presence to block any aggression from China in the region is critical for you.I am actually betting on a new proper large scale US Military base with Land ,Air & Sea capability being built in the North there in a Trump 2nd term replacing Guam .

That would be good. However my biggest dream is that Australia could become a Republic, leave the Commonwealth and become a State of the U.S.A--like Hawaii. I can only dream.

Thanks for your description of the Elk and buffalo pics...my family (i.e great, great grandfather) came over from England around 1860 and settled in the gold rush areas of western Victoria. .When the gold ran out started up farming, clearing the trees, growing wheat, apple orchards (exported the apples) and of course the smelly stinking sheep. Back in the 1800s you could claim land without buying it; which started the family off. Still, one of his grandsons later found a large lump of gold--enough to buy a second adjoining farm in the 1930s; when land was no longer 'free'. His son, my great grandfather built up the farms alongside his oldest son (great uncle). Still own small parcels of land there...sold off the farms in the 70s.

Regarding 'game meat'---don't laugh--the best meat I've ever had was/is the delicious 'pest' meat--the wild rabbit--which was everywhere back in the day. Genuine plaugue and problem for farmers. As a kid I used to love trapping/shooting and skinning those rabbits. My Nanna would then cook the bounty.

That is a heritage you can be proud of there ,my family were among the first Cattle Ranchers in Montana where we still Ranch today.I have never been able to work out why Australia has not become a Republic ,we have to deal with bus loads of bureaucrats when ever we come down to operate guided hunts & every time there is a SNAFU it is a English immigrant bureaucrat they have imported to take a Aussie job & obviously hates the country .

I studied military history before l served & got into it seriously when l left the military & throughout history Britain has just used Aussies & New Zealanders as cannon fodder & turned on them at every opportunity ,something they have done with most of the colonies .

The fact is if it was not for Australia ,New Zealand & Canada etc they would have lost the First World War & we would all be living in a different world . PS- I have always been fascinated with the Aussie soldier/horseman Breaker Morant & how the British put him before a firing squad during the Boer War ,he was a horseman / outdoors-man any Rancher here would be proud to have share their table & as a Veteran l would storm the gates of Hell with men like him at my side .

I have actually hunted in Victoria a few times after the magnificent Sambar deer in the Vic high country, in fact they are known as Indian Elk & are the second biggest round horned deer in the world after Elk so very similar habits & hunting style . Hunting them over hounds in the high country is one of my favorite hunts of any in the world l have been lucky enough to do over the years & l have hunting buddies from there that l have known for years & have come & hunted with me at home & in Africa.

Wild Rabbits are a amazing animal l have actually shot them in New Zealand as pest control to help out farmers whose land we hunted on .We would shoot 200 in a single night spotlighting & not even make a dent in them ,whole hillsides look like they are moving there are so many of them .

Got to respectfully disagree with you on that one; unless there's something I haven't realised/learned. I think the Americans coming into the First World War saved the day for the English. I like 'conspiracy theories'--and the conspiracy on this one is that the American Jewish elites offered them the United States forces to help defeat the Hun. The deal was that the British would seize Palestine off the Ottomons and start the 'Israel re-settlement process'. Deal too good to refuse I reckon.

Great poetic word image!! I remember at twilight looking at the hillside warrens from a distance. Also those beagles are such cute intelligent dogs.

Finally, so true about the red tape. Virtually can't do ANYTHING in Australia because of it. I also suspect Australian bureaucrats bring in short term foreign bureaucrats on contract to do the 'dirtiest' work...another way of 'passing the buck'. Long story but I had to deal with one in 'Family Services' during my 3rd (and final!) marriage--a Scottish feminazi and a plump man hating sook. These people get a blank cheque to spend as much taxpayers' money as they like funding lawyers to 'destroy' you.

Thanks but we are really nothing special among the Ranching community most people l know try to give back in various ways they can.

I was lucky/unlucky (depend on how you look at it ) to spend the better part of a decade fighting in Iraq & Afghanistan & then working as a contractor around the worlds shit hole hot spots & then guiding around the globe to see how good we have it here in America.It really grinds my gears when l hear the moron left running it down at every opportunity ,while l fully acknowledge it aint perfect it is a lot closer to it than the majority of others l have been too, including the EU ones the morons try to put on a pedestal .

Farming of Elk is increasing in popularity as it is a very healthy meat low in fat & high in protein & Vitamin B so keep your eye out in may be available in a store near you.Just do not over cook it due to it being low in fat ,you can basically substitute it for any Beef recipe , l prefer it to beef in slow cooked recipes ,it makes a fantastic casserole & Stroganoff etc.

Even as a cattle Rancher l have to admit Elk is prime meat very similar to well aged beef.You just have to be careful not to over cook it as it is very low in fat ,that with it having a higher protein & lower fat than most Beef cuts & being high in Iron &Vitamin B it is actually eaten by a lot of endurance athletes before they compete in major events like the Olympics when demand for it goes through the roof.

My favorite use for Elk is in your traditional slow cooked meals it makes fantastic hearty winter casseroles etc & it makes a excellent ground meat for chili dishes ,hamburgers & sausages etc ,

Even though we run Cattle on our Ranch,being able to go Hunting so often with guiding, our family probably eats at least 60% game meat as our preference ,of course we are lucky in having a commercial quality walk in cool room & industrial camp kitchen as part of our business to properly prepare & butcher all our own Beef & Game on site at the Ranch.

Elk are a fantastic challenging game species,if you get a chance to hunt them jump at it .Looking like a great season for Whitetail,they are a beautiful little beast aren't they ,l love hunting them on foot close up.

I do not really trophy hunt for myself anymore , l get just as much satisfaction as putting someone on one ,so l go for more of a challenging hunt ,but my wife is still keen on a nice trophy head so l have managed to put her on some great heads the last few years ,l really thing the genetics in the herd across the board are improving in Leaps & bounds .

Sorry can not sell any game products ,Good Luck with your future hunting ,l really think we are approaching a golden age in it, so grab every chance for a hunt you get,before Chyna lets loose something to impact it directly,we are currently watching the Africa Swine Flu clusterfuck they released on the world closely.which has killed over 22Million pigs in China alone & is impacting Wild Hogs & threatening Pork producers around the world.
