Temperature is usually 135-140 degrees F. If it's finished right the meat just melts. It's mostly for really thick briskets, the fat just completely melts down. Temperature is usually 135-140 degrees F. If it's finished right the meat just melts. Not mushy, it has a great meaty texture but all the fibers just fall apart
