To be honest, I do not know my way around beef and even I could tell you I've only ever had that cut not whole. Cooked rare by phở or ramen broth, or hotpot dishes, typically. Probably had it as jerky, too, but can't remember any such cases.

I like reading cookbooks from past centuries. Sometimes they knew what they were about. Sometimes... they didn't.
