When they graduate they will skilled at kitchen skills, not running a successful restaurant with a menu fit for local demographics, economic base, wholesale food credit rating/pricing, etc.
Like how a Physician learns to be a medical practitioner in residency, internships and attending positions, not during biochem, pharmacology and gross anatomy classwork.
Thanks, that is excellent advice! They hope to go into specialized baking; fortunately, they have the oppo to work for the shop. I hope they take advantage of 'interning' and expanding on their education. They want to go to patisserie school.
