Brine the turkey in kosher salt and brown sugar with a couple of bay leaves for about 2 days in the fridge. Remove the entrails if not already done before doing so.

When it’s time to cook pat the turkey dry. Cover the turkey in a layer of squeeze butter (like the parquay stuff in the blue bottle). Then season with Garlic salt and cracked peppercorn. Be sure to get under the skin. Chop fresh rosemary, sage, and thyme up. Then mince some garlic. Take about half a stick of regular butter and melt it on low in a pot. Let it cool a few mins. Then add the chopped herbs and garlic. Add a bit more of the squeeze butter if you feel more butter is needed. Then rub this all over the turkey. Again make sure you get under the skin too

Add a quartered onion and two lemon halves into the cavity along with any left over herbs and garlic. Cook on 350 in a roasting pan. Usually 3-5 hours depending on size. I also add diced red potatoes under the turkey in the roasting pan, knocks out the turkey and a side dish in one.

This is similar to my recipe, if you squeeze a fresh orange (some people use frozen OJ concentrate) into the brine it makes it slightly acidic and it helps tenderize the meat. I've never noticed a difference in flavor.
