I'm looking to buy a complete upper and swap it out. I have a Colt AR-15 that has the carry handle, so I want to be able to mount an optic on top and with the carry handle, it's a problem due to the ridiculous height, even if I put a picatinny rail on top of it.

If I buy a complete upper, does it have everything I need installed on it out of the box, or do I need to install the bolt carrier, the charging handle etc? I have no idea how to do that.

Is it simple enough that I can take it down and swap the upper by myself or do I need to take it to a gunsmith?
Upper swap is literally two pins, couldn't be easier. A complete upper will have everything you need, but I'd suggest you learn how to install/remove the BCG and charging handle because, well, you need to clean the dang thing at some point. ;).
If my pre-teen can build and strip an AR, there's no reason you can't. :)
