This is what I don't understand either. How can I encrypt something so that no one in my lifetime can ever decrypt it, but for an election we still have no idea what the fuck we are doing.

No. Without shilling options, there are proven ways to prevent this.

There are also proven ways to maintain voting privacy but make it verifiable. Think zk-snark technology.
