The only option is to toss the results and prohibit certification of the election. That would force the legislature to pick electors.

I didn't see anything in the lawsuit about ballots received after 8pm being illegal though?
You said "counted" while you clearly meant "received". The problem is distinguishing what was received after the polls closed
