..no we don't? Or we didn't 2016 anyway (source: worked as a vote counter in Georgia during the general elections 2012 & 2016).

Np, if you do work in the counting you might know why it is expected to take that long though, will there be multiple double checks for each vote?

I don't anymore, I moved to Sweden 2017, haven't lived in the states since. So I honestly don't know, as we didn't manually count each vote by hand when I worked there. Perhaps there isn't the infrastructure to get it done quickly by hand, since we don't usually do it? That'd be my best guess.
