What does this mean exactly? I don't really know what speaking like a lawyer has to do with the odds of victory. Is it supposed to be him watching what he says so it can't be used against him in court or something?

Generally speaking you are never going to hear a lawyer say "Yeah this case is certain". Partly just the way things are done, partly the fact that nothing is truly "certain", and I don't know but there may also be legal reasons.
