Can't they hand count the ballots then send them through the machine and see if the numbers still add up? Maybe the sting is watching them try to erase the software. Maybe there are quit a few people being sweated right now.
I work as a software engineer, and there's no way any competent software would flip votes due to a version mismatch.
Possibilities:
The votes were manually flipped at the polling location but they blamed it on a software update to avoid self-incrimination.
The software update flipped the votes due to outright fraud or being complete garbage.
The claim that this was a user-error is a blatant coverup. The coverup was intended to prevent closer examination, which would have revealed either (1) fraud or (2) unreliable machines/software, which would force a state-wide manual recount.

It would take me 2 seconds of programming to make sure that on this date, at this time, it would be impossible for the machine to be in any sort of a test mode.
Any software developer could tell you that is extremely reckless even if it is legitimate. They must be saying this because they know their asses are screwed and saying they put out an update could show it wasn't some coordinated fraud to steal our election.
If you would purposely designed it like that... sure. Use alphabetical order then flipping it to reverse-alphabetical in an update and have the place you are submitting to expect it in reverse order.

I can't think of a reason that makes sense or would be practical though...

Regardless of the software related elements this reveals an exploit where someone can flip the result, it may go unnoticed and you can't tell if it's deliberate or accidental. That's a hole in your election system.
The software and machines should have been certified by the SoS and checked by observers from both parties prior to the election. It’s a big enough deal that GOP official responsible for doing this in AZ did not do so and resigned today because of it.
Installing an update after this is done corrupts those checks which means that it’s a total no go. An update on Election Day is completely suspect.
Once certified, no updates can be allowed, because it would invalidate the certification. The simple claim that an update existed is enough to prove there was no (valid) certification.

These are essentially schemas (or non tech speak templates) that tell the machine how the ballot is arranged. This is necessary to accommodate the wide range of possibilities for various election jurisdictions and races. However this flexibility also means that the systems are vulnerable to exploitation.
Besides all of the complex scenarios people have raised such as malware and sophisticated actor exploits - it is actually much easier than that to abuse the process. Simply create two different election definition files for a tabulator and use the desired tabulation machine to selectively process ballots to flip the candidate count the way its desired. This can be done by all of the following: The voting machine company, election IT staff, gov contractors (many outsource this!).
