I can't stand to use mechanical keyboards, the constant clacking while typing annoys the hell out of me. I also prefer very low profile keycaps. I've been using a Logitech K740 for at least 10 years, the original one I had broke on me finally last year. It's not special; It doesn't have RGB or any macro keys but it works well enough for me.
The clacking depends on the switches you have, along with o rings. For you, I'd probably suggest Cherry MX Silent Reds if you prefer the linear feel (e.g., there's no "pressure" when pressing the key). If you do like the pressure, then you can get cherry mx black switches instead. There are other switch manufacturers, but I have 0 experience with them.

There are non-clicky mechanical keyboards. I'm using the Coolermaster SK650 Low Profile mechanical keyboard.
I specifically look for the loudest possible mechanical keyboards. Settled for the Azio retro.
