The hydra has many heads, just go after 1, and the others will flank you from behind.

The hydra's many heads are not eligible for the +2 flanking bonus because per the SRD you need another friendly creature in order to flank, not lotsa heads.

Still, a basic hydra still does 5 bites at +6 melee (1d10+3) with a full attack action so it's not terrible. Great to hit with an animate dead afterwards.
