Look into the Gundry diet. The lectins in many staple veg foods, like beans, cause lots of inflammation. I eat much more red meat than he suggests. Fatty grassfed meat is the best. After eating 8oz of grassfed steak, i felt great and had no rejection to it. It takes a bit to get use to texture changes but it goes away fast.
Also in regards to the Neuro issues you could look into the Wahls diet. She reversed ms with basically the paleo/keto diet. You need the saturated fat to make the myelin for nerves, as well as vitD. All the b12 wont help you make myelin if you dont have the saturated fat to make the myelin
