I think it looks better for the affidavit if they say they felt forced into signing due to coercion. If they refused to sign, it could look as though the threats were empty or insignificant.
I bet the only reason why they "caved" in the first place is to buy time for legal consultation and action. They probably never intended to sign and now they have all of the affidavits written down and lawyers called up so they can settle this matter in court, which the assholes don't want.
