Can someone explain to me as a non-American why do the Democrats have so much power in these matters? I thought the Republicans and the Democrats were on about equal standing... but they forced the mail-in voting no problem, now they can bully the Republican observers as much as they want... How come?

Democrat run/held cities (historically) so the corruption is very high.

Likely many R's were cucks/democrats in disguise and didn't lift a finger for transparency/observation

Because Trump is on one side and Republicans and Democrats are on the other. They both knew the plan going in to this election.
