My wife marvels at how “amazing” of a cook I am, and I’m like...I literally put cheese and chicken on a tortilla, microwaved it for 30 seconds and then swirled some sour cream and hot sauce over it, folded it in half and stuck it in the toaster oven to get it crispy. Boom, 2 minute quesadilla that’s 10 times better and with none of the grease of a Taco Bell. No voodoo magic involved. Just one step over being the absolute laziest one can be about making a quesadilla.
I also have a stupid easy recipe for shredded chicken. Throw a few pounds of chicken breast in a slow cooker, with a cup of chicken broth, a tablespoon each of salt, pepper, garlic powder and onion powder. ~6 hours later you break it up with a spatula and have days worth of chicken that can be used for just about anything. Tacos, quesadillas, sandwiches, etc.

I also have a stupid easy recipe for shredded chicken. Throw a few pounds of chicken breast in a slow cooker, with a cup of chicken broth, a tablespoon each of salt, pepper, garlic powder and onion powder. ~6 hours later you break it up with a spatula and have days worth of chicken that can be used for just about anything. Tacos, quesadillas, sandwiches, etc.
