Well, they're counting in small batches that tabulate to a total, so if they arbitrarily miscount votes they'll come up with a completely different number, humans are terrible at introducing random noise that results in the specific total they need.
That means there should be a digital trace/log for such overriding requests - if it hasn't been wiped clean already. Fraud in every imaginable way. No surprises if many ballots do get overwritten eg. they intentionally screw up the original ballot and "duplicated" to a Biden one.
