As a youngster in the restaurant/ food prep job I had we weren't allowed to wear rubber latex gloves while handling food in my state. You know why? If you wash your hands properly before hand it's the most effective. Sweating inside latex gloves and having it grow bacteria inside the glove is what will drop out into the food (especially raw like salad) is what's gonna get you sick.
