It’s pretty easy to regulate the temperature. Except I messed up this morning. I used a lot of charcoal so I wouldn’t have to take the turkey out to add more later. But I gave it a little too much air and the temp ran away for about an hour. I got up at 5am to set it up and took a little snooze and read some TD on the couch. When I got up again to check, the smoker was hot AF. Skin already crispy. So I had to take the turken off and cool it down. I think it will be okay.

How do you like the egg? been on the fence... Is it difficult to master?
