I'm a turkey fanatic. The absolute best way to make turkey:
spatchcock the turkey. (Duckduckgo this method. It's not hard to do and is paramount to evenly cook the bird.)
Dry it off completely then "dry salt brine." I use kosher salt, no iodine is the key. I don't know why, its just better.
Into the fridge uncovered for 24 hours.
Rinse off the salt. Completely dry it. Cover turkey with whatever spices herbs you like.
Coat turkey with vegetable oil. If you want to bacon lattace make sure the exposed skin has a light coat of vegetable oil.
Preheat oven 425. Cook turkey uncovered on a baking rack for 30 minutes or until brown. (For clarity cookie sheet, baking rack, turkey. That's it. Nothing fancy.) You can put water in the cookie sheet if it's a particularly fatty bird but be careful doing this. You don't want to steam the meat.
Reduce heat and bake at 350 based on the turkey weight. 20lb turkey will be about 2 1/2 hours. Meat thermometer is your friend here.
If its getting too dark for your taste cover the top of the bird with some foil.
When done baking let it rest for at least 30 minutes.
