Law enforcement needs to understand they all have to pick a side. If they continue "following orders", they will be the enemy of the people.

You have things very, very wrong. The vast majority of local cops are patriots who simply want to do the job because it’s an honorable and righteous thing to do. I’m a cop, for the sake of clarity.
The issue lies in the administration and the very few who are willing to do unethical things. Admins have been completely taken over by the democrats. Sheriffs are elected only with support from democrats while city chiefs are appointed by democrat mayors. The only way to climb the ladder is to be on the inside.
Local elections matter. If you want good cops that will serve their communities, remove the democrats from power.

In the big picture it would not have changed anything. Not by any one individual's action. A cop quitting out of principle might get a headline on this site but literally nothing else would change.
If the AG is corrupt or the police chief is corrupt, lower ranking officer actions don't fundamentally matter on an individual level. You're thinking that all cops would walk out at once -- that's never going to happen.
