It sounds like she wants to delete the software that might have a log of when and what changes were made to the Poll Book. So we'd still have the final file that they may have matched up with the numbers after the fact, but not a detailed verifiable log.
They hold onto blood samples for athletes for years and test years later. Given how cheap storage is it doesn't make any sense why election records wouldn't be stored for decades to be poured over to make sure nothing was wrong, until you realize the people running the elections don't want them secure.
