Mayo or butter. Maybe add some dill. Very simple sandwich.
The first time I'd ever heard of cucumber sandwiches was in college. Our English Literature class covered Oscar Wilde's "The Importance of Being Earnest" which mentioned a gathering where they served cucumber sandwiches.
