I mean he probably is a huge dick, but also a great guys. That’s kind of the general attitude in nice restaurants behind closed doors.

The kitchen will fight with the service staff all goddamn night, the managers fight with both sides, all night. In the mean time, everything is still getting done exceptionally by all sides, and as soon as a customer starts being a dick, they all come together because “Fuck that piece of shit customer, who do they think they are?” It’s a weirdly effective circle with lots of money to be made in it.

Lots to be made if you’re a tipped employee. Everyone else, not so much.

Find the right one and money is there. We had three kitchen employees with a salary over $70k, line cooks started at $20/hour. If it’s something you have a passion for, the career opportunity can be there.
