Texas has a very diverse food scene, with the major cities having their own. I would say Dallas has very good high end food, Houston has a lot of inexpensive and diverse options, Austin has a higher concentration of Americana cuisine with a large Mexican influence and German influence. There is also a couple of south asian hot spots. San Antonio is similar to Austin but with a higher concentration of Mexican influence, and smaller overall food scene.
Texas probably has the best traditional American food, but in terms of diversity, aka "American melting pot", you get really good food in the major cities like NYC and LA.
Although because the governors of those states killed all the business, that may not be true anymore.
