I think the Prequels are enjoyable to watch despite the bad CGI or dialogue. If you can watch for the story and think of it as a documentary rather than a blockbuster fantasy movie you're fine. I am anyways.
I think some of the crap they get is a bit unwarranted. Anakin is supposed to be a cringy maladjusted dweeb. That was his entire weakness that was exploited.
Like I said, they're not cinematic masterpieces. They're to give a story as to how the OT universe came to be. If you view it as an enacted explanation rather than a story, it is more enjoyable to watch. I didn't think the ending was forced but there definitely should have been a little more substance to Anakin's turn. My two cents anyways.

To me it made no sense, how the hell did the First Order, which up to that point had been a small (compared to the New Republic) insurgency able to amass enough resources to build that monstrosity when it took Sidious having access to the resources of the entire Galaxy to build the Death Star.
And on top of that how the hell did they build it with no one noticing.
It's also worth mentioning, since you can see each of the MIRV beams (completely ignoring that there is now a MIRV LAZOR) and the leaching of the star all from the same planet, that Starkiller Base and the targets are all in the same system. So how in the nine Hells did they build this thing in the capital system of the New Republic?
This is partly why Episodes 7, 8, and 9 are awful films. Even if we ignore the political overtones, the films are still bad.
The story is nonsensical (especially episode 8) and the characters were either miss used and/or thrown away. On top of that the music was so forgettable. Say what you want about the prequels but they had some of the best music in Star Wars history (Duel of the Fates + Droid Army March to name a couple). With the sequels I can’t even remember the name of ONE track that stuck out to me. Idk why the music is as bad as it is, John Williams is composing (maybe he’s just getting old).
I will say that the acting is better than the prequels (lord knows these people are legitimately giving it their all). But I will take a good story with bad acting (prequels) over a bad story with good acting.
That being said, Disney hasn’t been ALL bad.
Rogue One was a legitimately good Star Wars movie (could have been better but was still good) and they did an amazing job with the Mandalore.
I would rather watch Jar Jar for 12 hours than watch the Disney trilogy again as they just kill nearly all of the original cast (Han, Leia, Luke, C3P0, almost Chewbacca) and replace them with their woke little diversity kids. Plus the Disney trilogy was super predictable.
The execution may have been terrible, but atleast it was made with love, unlike the Disney trilogy. The story of the prequel trilogy is actually really deep, just needed someone other than Lucas as director, but leave Lucas as executive producer.

There's also the worldbuilding - whatever people might think of the movies themselves, there's a lot of love for the Prequels and Clone Wars era as a setting.

I re-wrote the third film of the sequel trilogy in 20 minutes and came up with a damn good plotline. Disney's butchering of the trilogy- and especially their butchering of the third film- will go down in history as one of the worst business management decisions/examples of all time. up there with "New Coke."
Arguably, New Coke was a success because after they abandoned it, they brought back "Coca Cola CLASSIC" and sales went through the roof because of nostalgia or whatever

I much prefer an older theory from before the dark times... before the prequels. Back then, it was speculated that Vader slowly became the dark villain over a long, gradual transition. Basically, fighting in the Clone Wars (which was nothing like the prequel Clone Wars), and it was like a slow-burning Vietnam War that suffocated whatevery good him. Battle by battle, he suffered wound after wound, eventually becoming more machine than man (not all at once).
I still remember (and still search for) a fan-art rendering of a maskless Clone Wars-era Vader. He had the face of a younger Sebastian Shaw (the real face of Anakin). He was dressed in black, and there was a hellish landscape in the background. You could see the experience of a thousand battles on his scarred face. It was... emotional. The image has stuck with me for 20+ years. I wish I could find it again!
