Need suggestions! Currently have a glock 10mm, 380, .22 target and a loaded ar-15. What should I get next? Was considering a shotty, but maybe ar10? Or if I can find one, 9mm/40?

I have boxes upon boxes of ammo. Currently sitting on 1500+ rounds for the ar-15 and 500+ of each of the others.

You need a shotgun. Something with a long barrel for hunting and a short for HD
ar10, or a sca 20s. you have close up covered, so you need something for long range precision.

get a compact hand gun that takes 9mm (common ammo) it will help you have access to ammo, including stashes, and a gun is useless unless you have it when you need it
My 380 is a keltec compact, no bigger than a wallet. Looking to really fill out my collection, leaning towards a home defense shotty depending on what's available here in CA
