  1. trimmed full packer brisket
  2. super light coat of mustard
  3. season w/ 50/50 salt pepper
  4. post oak wood, smoke at ~260F for 8hrs
  5. after 3hrs, mist meat every hour w/ water or apple cider vinegar
  6. after 8hrs, remove from smoker. Wrap tightly in butcher paper
  7. put back in smoker 3-4 hours.
  8. remove, let rest for at least 1 hour.
  9. enjoy
