What would happen if Joe Biden were to die of natural causes before Jan 20? His health is declining. Especially now that he has had an injury. Who would assume the Presidency? I have searched through my copy of the constitution and found no clause referencing this situation.

TBH, there’s not a clear answer on that one. The 25th amendment only deals with the succession of the sitting President

I believe it's up to the electors, so they would either choose Trump or whoever the DNC would recomment they choose instead of dead Biden.
