They checked more than 100. The first test was just 100 ballots, and they found 2 switched from Trump to Biden and a third switched to blank. Then they got a second batch of 1526 ballots and found more 'errors'. 9/1626 were wrong. Ward wanted to expand the search, the court refused, so she appealed.
Here's the court filings. Note the Lincoln Project is amicus for the state shutting things down.
Yeah, in a 'normal' election, the signatures would have been examined first and likely objected to prior to counting the ballot, and they would have been tossed or at the very least put in the provisional ballot pile to be adjudicated later should the election turn out to be close enough. This is also the game they played in other states, which is why they had historically low rejection rates for mail-in ballots, by orders of magnitude.
In my experience, every reported value and reporting process gets audited every single year. Compared to private instiutions, all levels of government are a joke with regards to auditing practices.
While a rope can be re-used and thus grows more efficient with each use, a bullet costs a quarter and gets you a much more spectacular and shocking result. Science pretty much shows that "deterrents" don't really stop people from committing crimes, but there's nothing wrong with providing deterrents anyway.

FOIA can't unseal. FOIA can get anything not sealed unless it's exempted under state FOIA law (e.g. SSN).
