Whites are already the minority among children in the USA. When Millennials are in their 60s, they will be the last majority-White (and just barely a majority!) generation in America (barring a drastic change in immigration patterns and White birth rates).

Most Hispanics in the USA are mixed race - usually a blend of Native American and European, but also African (depending on where in Latin America their ancestors come from). Some Hispanics are pure blooded Native Americans or Africans. Only a small number are pure blooded Europeans.

Genetics is generally a mess, there's no specific set of DNA that makes you white or Hispanic or whatnot. There are markers, but they're shared among multiple groups, and they're not always clear.

That being said, if they look white and act white... Then for all practical purposes, aren't they white? Currently, about 53% of them identify as white, but they're listed as Hispanic due to the origins of either them, or one of their relatives.
