It's definitely ridiculous, but at the same time, there's no reason to be nasty to these people that would be fired if they didn't comply with the state mandates. Be angry with the tyrant governors that think they have this power, not the minimum wage employees.
Not to mention that behaving that way won't change any minds. Be kind, politely refuse, and leave if they won't accommodate you. That is much more likely to change the minds of people when they begin to see that the anger and hostility is only coming from one side of the aisle.
