In a word, time. It takes time to investigate, subpoena, gather evidence, prepare court cases, present evidence, gather expert witnesses, appeal, have cases sent back down, retry them, appeal again, then work your way up the ladder. And being the Plaintiff puts the burden of proof on us. Plus you are asking a HUGE thing, to reverse an entire presidential election, so you need overwhelming evidence to get a court to do it. Add in that the media is biased against us and twists every story or just refuses to report them and its hard to gain traction. Consider that it can take 3-5 years to get a murder conviction against someone and its not so surprising. Also, it SHOULD be hard to overturn an election. Otherwise, the Dems would do it every single cycle. Team Trump has done an amazing job getting as far as they have. Given time, I am 100% sure the election would be completely overturned and Trump would be shown to have won an overwhelming landslide victory. Now its going to be tough, doable but tough, to eke out a bare bones 270 win or House contingency victory. Which is why the Dems have been slow walking everything they could from Election day onward, to run out the clock as much as they can to give us as little time as possible.
