Privately hosted IRC server isn't bad, either. Just, don't hook it up to one of the big networks. For a different project I have going, just to be safe, I back end a Discord channel with IRC. If the Discord goes down, we still have ways to communicate.

Don’t make discord servers to plan meetups. Use messaging chains, through Signal ideally, and use an anonymous straw poll for decision making.
