My question is, if Pence picks trump electors, isn't it clear that the congress would impeach them in 15 minutes easily? The best move for Pence is maybe to disqualify all 7 States with duelling electors so nobody gets the 270 & he can slip it over to the House to decide.

This passage seem to say the opposite of what you're suggesting. It reads like an explicit instruction for Pence to count all certified votes.

Normally you don’t need to try someone in a court of law before you arrest them. We have evidence, everyone here tells me every day, we have massive amounts of evidence of voter fraud. Why haven’t people been arrested yet?
“Massive evidence” implies that if we make these arrests, we will have enough to prosecute, make the prosecution stick, and put these people in prison. So we have massive evidence or we don’t. We don’t have enough to prosecute these people, then we don’t have “massive evidence.”
I don’t know why we are doing all of this other shit and planning parties and rallies when what we should be doing is pressuring the representatives we elected relentlessly, to the point of frightening them, if they don’t fucking arrest these fucking assholes right now. Arrest them.
That’s what I’m trying to do and I feel I am alone. Three days ago everyone here was hyped up about martial law, the president says he’s not going to do it and now everyone’s against it. What the fuck is going on around here? We need to punish these motherfuckers, if that involves bringing in the military, we fucking do it or we watch our republic die.

If several states have two sets of competing electors, it would be at Pence's discretion which set of electoral votes he counts.
