That's not how it works. VP can refuse certain electors but it's moot if the House ratifies the given electors. It is more complicated than that but what happens on 1/6 is not just VP selecting whichever electors and choosing the president based on what they decree as the real slate of electors for each state.
What is to keep any future democratic VP from claiming a certain subset of states are illegitimate and picking their winning subset?

Maybe those states can prove they have secure elections? It’s only democrat run locations that have these issues, every single election.
