I learned how to spell it by linking it to StAN and JAN BerenstAiN, so I know it was always spelled like that. You're just conflating it with Frankenstein.
I started a long discussion as a child years ago at one of our huge Thanksgiving get togethers by bringing one of the Berenstein Bears books to the adult table and asking if it was pronounced like steen or stine. Had it been spelled Berenstain, that debate would have never happened, so I know for a fact it was spelled Berenstein.
