i think thats really an issue of the amount of food sold.
You can always find specialty shops to deal in those things, but say, its probably not worth hannaford's money to start up a special "greek food" aisle when it wouldnt cover most sales in the store and probably wouldnt make that much money.
With hispanic food, we have a large population of people who buy it -- of all races. and a significant portion of actual hispanic people in this country.
its really teh same reason you see chinese groceries sometimes as special shops that cater to specific customers and areas where there is a market.
if I opened one in this town, or even added that section to our grocery, nobody would buy it. they might come to point, laugh and stare, but not buy anything.
thus that aisle would be lost money.
however what I do think there might be a market for would be an international buffet with foods from as many nations as possible. that would give people a sort of sampler and let them experience things without it being so risky and they get to see it properly cooked.
the problem there would be expense. youd need lots of real chefs and ingredients so the cost would be insane.
