Of course they can. The insurrection act is a federal law, the 25th amendment is the constitution. Once the 25th gets triggered Trump is no longer president, end of story.

The words of the amendment say it can be used when, "the President is unable to discharge the powers and duties of his office." There is nothing in the 25th that limit that to health reasons.

Meh. I personally don't care about SCOTUS battles. or even lower courts. But we only need two or three states to de-certify, which they still may do. Trump could also still release a ton of dirty laundry; Biden dirt. He may feel like its the only way to prevent that scum bastard from holding office. I've not been much for the doom and gloom stuff but its time to accept it: The Swamp was too deep for one man. Its a salt water swamp and only the creatures specifically designed for it can function, survive, and thrive.
