I did hear people today refer to pence as 'Mr. President', and that struck me as odd, but didn't want to be emotional about it in case it was just a reference to VP. Now it makes sense.

Trump is still POTUS. They will be forced to certify this vote (and commit treason) before they can do anything regarding the 25th. If they were to invoke the 25th in the middle of counting, Pence would no longer be President of the Senate, and they would have to nominate and confirm a new VP, who would then be able to act in the capacity of PotS.
