I am doing this myself currently! Sort of as a 2021 resolution.
Working on deciding on an open source Android version that is de-googlaged. I am really looking at E OS. Any other recommendations?
Lineage is great, but if you want extreme privacy swap to graphene with a compatible phone.
The big change needed is dropping google play services and gapps, without those you're well into the clear.
