try something simpler. start working with your church parish or your close community, to "exchange labour" without involving money. Just try some transactions first, and then try to expand.
See, taxes can only be collected when there is a money transaction. If a transaction does not involve money (the one that is recognized by the govt.), they cannot tax it.
For example, if you tell someone that you have given them 100 bitcoins, the govt. cannot tax this because the govt. neither guarantees any sort of legal protection for transactions based on bitcoins, neither it considers it money.
Bitcoin has its own problems, in my opinion, but my point is, try "exchanging labour" with your close community, without involving money, and you can save sales taxes and income taxes and what not, on it.
