After google play canned parler I want to ditch gmail. Also concerned about the future Ministry of Truth tracking down my socials to my real person/real job. Seems like protonmail is a good option. Don't mind paying a few bucks.

There's a free version. It's encrypted as well. I just signed up!

At this point, creating your own domain and hosting your own email. That's what I did recently after deleting my 14 year old Gmail account. No risk of getting snooped on or cancelled if you are the owner of the website!

I own a few domains myself but they pretty clearly point to who I am. Also worried about how easily any US based provider would be glad to give up my billing/contact info to certain "non-pedes"

Synology has an affordable network attached storage that does email hosting, cloud storage, secure group chat and backup storage. And it lives on your network. Easy to use and great support. https://www.synology.com/en-us/support/nas_selector

So I can run that from my house?

Yes. It will plug into your network via ethernet cable and use your internet for cloud, chat and email. Among other services.
