1.) Cloud hosting, replacing AWS? 2.) DNS service ( replace Cloud Flair) ? 3.) Payment Processing? ( Replace paypal/stripe)

What would help the most, and what is in demand the most?

I'm not saying you should not. But if anyone comes up with both a solid design and implementation of such a thing, I'm afraid it will be trip to gitmo level of achievement. You probably want to be outside of US jurisdiction while doing that. Read on the story of PGP https://en.wikipedia.org/wiki/Pretty_Good_Privacy#Criminal_investigation
