I've been using https://www.goaquagear.com/products/waterfiltrationpitcher for awhile but wondering if there are better alternatives.
Also wondering if I should upgrade to the big under-sick or counter-top filters.

Check out Alexapure or Berkey
Alexapure is crap. They use cheap steel that rusts near the lid (their solution is that this is normal and just wipe it off) and their filters get clogged and unusable after a few months. Would not recommend.
Maybe you got a bad one, we've had one for 6 years with no issues with rust or filters. Just my opinion.
