I wonder why this is never ever brought up? What am I missing? I understand it's a huge effort to coordinate and - first of all - to convince people to take part, but wouldn't it be worth a consideration at least?

It wouldn't work. I. The midst of economic collapse, the workers lose their leverage. If we quit, the jobless will just take the jobs in our place. Not even CEOs are safe, because one in illinois that my dad knew went to the protest and lost his job
I imagined to start with a warning strike, just to scare them, but not long enough to justify losing your job.
