This is some next-fucking-level bullshit. I write fantasy novels with literal magic, and I think those stories are more down-to-earth and realistic than this. In fact, I think whoever came up with this should write a novel about it. Hell, I'd read it since fantasy is my favorite genre.

Depends on what you're looking for. If you want something easy to read, anything by Brandon Sanderson is good. He puts out books faster than any other fantasy author I can think of, and is particularly good at designing interesting magical systems. His Mistborn series is a good place to start, but be aware it moves in the fourth book from strict fantasy to an odd (but still great) sort of "Wild West Fantasy" to include guns. The Stormlight Archive is also phenomenal.

If you really want to read some hardcore shit, though, I'd recommend Malazan Book of the Fallen. We're talking a story that spans thousands of years with a vast number characters. But for those with the tenacity to push on, the series amounts to, in my opinion, one of the greatest stories ever told in fantasy.
